To celebrate
not only the change in season, but also the return of a favorite short story,
Tasting Camilla, I've included a recipe for a delicious treat.
CRANBERRY
UPSIDE DOWN CAKE
Ingredients:
1 box
yellow cake mix
4-5 cups
raw cranberries (washed)
2 ½ cups
white sugar
1 cup
brown sugar
1 stick
of butter (¼ lb)
1 cup
walnut halves or pieces
Preheat
oven to 350 degrees
Mix
yellow cake mixture as instructed on box and set aside.
Slice stick
of butter into thin slices. Put butter evenly over the bottom of a 9 X 12in
pan. Sprinkle on walnuts. In separate bowl, mix cranberries, white sugar and
brown sugar. Spread mixture over walnuts. Pour cake mixture over everything.
Bake
45-50 minutes. Let cool 10 minutes. Flip over onto flat plate and serve.
